Yui is in Zidomari Ginowan City. It is in a place that entered the side street one step from Okinawa’s aorta, National road 58. I think that it is in a place that is easy to come by car. And this is Yui soba. It is a little luxurious Okinawa soba with Soki, cartilage soki, Sanmainiku, turtle, omelette topping. First, I drunk a bite of soup. I felt the delicious taste of soup stock. It is a thick umami, but it is not persistent, and umami and richness spread in my mouth. The soup was based on a Japanese style soup which brings out the flavor of the bonito section and the taste of the kelp soup to the maximum. It seems that they make it by adding a pasty pork leg there. Because of that, it has plenty of collagen and it makes it a solid soup that we can feel rich flavor and deep richness.
Straight and thin noodles. It is a fine noodle that matches refreshingly with a thick umami soup. It was a delicious Okinawa soba with toppings’ Soki and Sanmainiku tastes that are rich in taste and strong overall umami. It was rich in umami, but it was not persistent and could be eaten fairly neatly. I thought that it is the taste of old-established Okinawa soba for more than 40 years.
