It’s a thick Tonkotsu soup, but there is no greasiness, it is finished in a mild mouthfeel. It matches well with the bittern of the topping mugwort.
It is easy to eat with reasonable elasticity with a crisp texture of its noodles. Soki pork are also cooked well, meat disappears from bones and it is easy to eat. The seasoning of the Soki poke is not too strong, it has been seasoned according to the rich Tonkotsu soup. Mandarin desserts feel the kindness of the country mothers (laugh).
